Show the 3 cards dealt as a Monte Hand and state you would be one card shy of a really good hand if the card in the center was (State the card you need).
Turn the cards around and have the volunteer pick the center card dealt you would like to have changed to get a really good Monte Hand.
Have them lay the picked card face down on the table and turn your hand around and expose the two cards remaining. Flip up the card on the table and it has changed from the original picked card you had to the one you needed.
